Wine Making Notes: One of the world’s great grapes, it is powerful yet fragrant; seriously tannic yet with allure and richness. One complex wine.

Cabernet grows exceptionally well at Pindarie. Our single block is on the western slope of what we know as Schoff’s Hill, the highest elevation at our vineyard. Planted on our famous red loam over limestone (known as terra rossa soil), the strong vines produce small bunches and small berries, consistently producing an award winning concentrated wine year after year.

Minimal handling with this variety, picked, destemmed and fermented long and slow, before being put into expensive French oak for a long sleep over 11-12 months. We ensure that oak and typical Cabernet structure are present but subtle, so the varietal characters of the grapes are forever present.

2018 vintage is one of the best vintages since 2013 and 2016.

Tasting Note: Our vines produce powerfully-fragrant fruit which we work hard to showcase in the bottle, and so have chosen to release the wine relatively young. As the aroma and perfume is best captured in its youth.

The warmth of our vineyard on the Western Ridge of the Barossa means that the perfume is in the red berry, blackcurrant spectrum (cassis), and ensures a wine of charm at an early age, with pronounced but even and round tannins. Being Cabernet it will cellar beautifully, but age is not essential for enjoyment.

Food Pairing: Ideal with a wide range of red meats cuisine, especially dishes with lamb or pork.
